Did you make a new year’s resolution this year?  I’ll be honest, I used to but I don’t really anymore.  Instead I set goals that I want to achieve throughout the year, realistic goals.  This year one goal is for me to pay off the last of the joint debt from my first marriage. That’s a whole story I won’t get into but I only have about $2000 left and that debt will be gone and help me keep moving ahead.  To me it will also feel like another chain broken from my first marriage. I’m proud of myself that I’ve been able to do it myself. It’s taken forever but I’ve increased my credit score over 120 points since moving towards a better financial future.

Another goal I have.  I want to lose about 8 lbs.  Sounds easy enough except I’ve been stuck at almost the exact same wait for about 5 years now.  Sure I fluctuate a pound or two in either direction but it seems my median is right where I’m at now.

Lastly, My doctor has me on a Low FODMAP diet for possible IBS and it could possible help with some of my ulcerative colitis symptoms.  Staying on the diet has been hard since it is very restrictive. Yes I’ve fallen off the wagon a few times but for the most part, I’ve been doing it.

Ok so, the real reason for this post.  The Gortons’ Realistic Resolutions Challenge with SparkPeople.  It’s a 30 day realistic challenge that’s easy to follow along with.  You sign up for the challenge for free with realistic and helpful things to do every day to help you with your healthy New Year’s resolution. I’m on day two.  For day two it asks me to drink once more glass of water today than I normally would.  That’s easy for me because I actually enjoy drinking water especially with a little lemon it it.

I found that the 30 day Gorton’s Realistic Resolutions Challenge can actually help me with 2 of my goals for the year.  To lose the few pounds I want to lose and to stay on my low FODMAP diet my doctor recommended for me.  I made a yummy dinner today using grilled halibut from their Gorton’s Grilled fish selection.  It’s gluten free and I’m allowed fish on my diet.  I paired it with some other things that were allowable on my diet like pineapple and hominy for a satisfying, healthy, and diet friendly meal.  Even my kids loved it!

I’ll be the first to tell you, I’m not a big fish eater.  I just don’t like the fishy taste and smell, I don’t. Yea, I know, and I’m a Gorton’s blogger. BUT, being a Gorton’s blogger has helped me explore the different ways to eat seafood and fish and I’ve found plenty that I love.  My kids love the Potato Crunch fish fillets.  Everyone loves the shrimp.  My oldest son wanted to try the grilled halibut.  I was iffy about trying it but I did since it fit into my diet.  I ate every bite of it and enjoyed it.  It was so good.  Juicy, flaky, flavorful, and it wasn’t super fishy like I expected. I also, bought the Gorton’s Grilled Tilapia and now I can’t wait to try that!
